Environmental Monitoring and Listeria Control for RTE Facilities

Why Listeria monocytogenes is one of the most serious hazards for ready-to-eat producers, and how a facility keeps it under control.

What this course covers

Ready-to-eat food is eaten without a cooking step, which is why Listeria monocytogenes is one of the most serious hazards for RTE producers. It grows at refrigeration temperatures, survives in damp and hard-to-clean spots, and can persist in a plant for months or years. This course explains why that matters and how a facility keeps it under control.

Environmental monitoring is a verification activity under 21 CFR 117.165. It applies when exposed RTE food could be contaminated by an environmental pathogen and that hazard requires a preventive control. The regulation expects written, scientifically valid procedures that identify the test organisms, sampling locations and number of sites, timing and frequency, methods, and the laboratory used. It also expects defined corrective action procedures under 117.150.

Next, the course covers how to design a sampling program using the common four-zone model, from direct food-contact surfaces (Zone 1) to areas outside processing (Zone 4). It then walks through responding to a positive result. That means finding the source, correcting the harborage, and confirming the fix with repeated negative results before returning to routine monitoring.

The course closes with records and review. A preventive controls qualified individual must review monitoring and corrective action records within 7 working days, or longer with written justification. Trending results over time is what helps catch problems before product is affected.
