Food GMP Essentials for Production Employees

The practical rules behind 21 CFR 117.4 for the people who make, pack and handle food every day.

What this course covers

Food safety is not only a management job. It happens on the production line, in the hands of the people who make, pack, and handle the food every day. Under 21 CFR 117.4, everyone who manufactures, processes, packs, or holds food, including temporary and seasonal staff, must be qualified for their tasks and trained in the principles of food hygiene and food safety, including employee health and personal hygiene. FDA also expects records showing that the training took place.

This course gives production employees the practical rules behind that requirement. You will learn when hands must be washed, why illness, sores, and infected wounds must be reported to a supervisor before food is handled, and what the CGMP personnel rules say about garments, hair restraints, jewelry, and where to eat, drink, and use tobacco. From there, the course covers the three types of contamination hazards, biological, chemical, and physical, and how allergen cross-contact happens during changeovers when tools are shared or procedures are skipped.

Cleaning and sanitizing come next. Soil has to be removed before sanitizer is applied, sanitizer has to be used at the right concentration and contact time, and the result has to be verified rather than assumed. Employees also learn why pests, leaks, damaged equipment, and chemical mix-ups need to be reported right away.

The course closes with the habits that protect both the product and the person doing the job: accurate records written at the time of the task, stopping and reporting when a check fails, holding suspect product instead of deciding alone, and staying alert to food defense concerns such as unfamiliar visitors and signs of tampering. It is designed for new-hire onboarding and annual refresher training.
